Shing Pak or Mandvi Pak

 

Shing Pak or Mandvi Pak (peanut fudge) is a humble-vegan-everyday-little treat, good to satisfy any after food sweet craving. Make it with less sugar and a course texture. For 1.5 cups of peanuts I used about 1/4 cup sugar (may be a tsp more but not less).

Method

  1. Roast peanuts and remove the skin. Roast the peanuts and let them cool, then rub the peanuts between your hands. That should knock the skin off. Don’t worry if you can’t get them all off. Crush the peanuts in a food processor to get a coarse powder.
  2. Add 1/4 cup of sugar to a pan with just enough water to cover the sugar. Add saffron and crushed cardamom to the sugar syrup. Cook the sugar syrup till you get an almost 1.5- to 2-string consistency.
  3. Add the crushed peanuts to the syrup and switch off the stove. Mix it and spread it out on a small rimmed plate. Once a bit cool, make pieces.
