Who doesn’t enjoy the occasional Jalebi Gathiya. Here’s how we can make it a bit healthier and compassionate to other life.
Fafda Gathiya – Follow your usual Fafda Gathiya recipe however bake the Gathiyas at 200 degrees celsius instead of frying them. They bake in approx.10 mins and taste as good or even better than the fried ones.
Vegan Jalebi – Follow a vegan Jalebi recipe using urad dal (split black gram) and rice (https://www.youtube.com/watch?v=FNLzmxuzKwQ). You have the option of avoiding food color, add saffron in the syrup instead. The Jalebi turns out crisp and delicious.
Instead of the traditional Sambharo which uses oil, try a tangy-sweet-spicy papaya and carrot salad. (Inspiration- Thai raw papaya salad). Use maple syrup or any other natural sweetener if you want to avoid sugar in the salad.
Remember Jalebi is a treat and not a health food. Have more salad and less Jalebi, and you’ve done good for yourself!
