This Ganesh festival, try Ukadiche Modak. These can be made vegan by replacing ghee with coconut oil. Although not a traditional Gujarati delicacy, i am happy to borrow this recipe from Marathi friends, as this Modak is healthy as well as tasty. There are plenty of recipes available online. I used this (https://www.indianhealthyrecipes.com/modak-recipe-modakam-recipe/). If you would like to avoid jaggery, use chopped dates and figs to sweeten the coconut.
If you would like to make the traditional Churma Laddoo, then those can be made vegan too. Follow the regular recipe but use sesame oil instead of ghee. Also, avoid frying the atta to make churma. There are two alternatives to frying the atta; Bake the atta at 180 degrees Celsius till done, or make Bhakri of the atta on the stove top. Use the baked atta or Bhakri to make churma.
